Vegan Peanut Butter Cookies

I broke away from making my chocolate chip cookies this weekend to make these Peanut "Better" Cookies from Vive le Vegan!

Now, if you liked my Homestyle Chocolate Chip Cookies, and you like peanut butter, you'll love these!

They are very "peanut buttery", because just as you finish mixing the batter (again, just need a bowl and spoon), another 1-2 TB of peanut butter is very lightly swirled in before spooning onto a cookie sheet. This gives an extra pb hit for those of you who love that peanut buttery taste (you know who you are)!

Idea: Sometimes I break off chunks from a dark chocolate bar and press a piece or two in the centre of a few cookies just before baking. That way, you have some classic pb cookies, and some chocolate chunk pb cookies!!
