Fresh Fruit Crepes with Celestial Cream

I just finished testing these two recipes for the cookbook. Pictured are my Fresh Fruit Crepes with Celestial Cream.

I was actually quite surprised with the results testing these crepes. I didn't think I'd achieve a thin, egg-y crepe-like batter that would be:
(1) quick to assemble and
(2) reasonably easy to cook (especially without a crepe pan)

But, this crepe recipe worked out beautifully, and the cream.... oh my... heavenly! I can eat this on anything, or nothing - just a spoon works fine, thank you very much! :)
