As-You-Like Muffins



These are my As-You-Like Muffins from The Everyday Vegan. This is a flexible recipe where you can add your favorite extras (dried fruit, nuts, carob chips, etc)... hence the name! I do offer some suggestions in the sidebar of my recipe, such as a tropical theme including dried coconut, pineapple, and coconut extract.

I added raisins and sunflower seeds to this batch (seeds instead of nuts since the baby isn't eating nuts/nut butters yet). I also substituted barley flour for the whole-wheat pastry flour (baby also isn't eating wheat). There is a cup of applesauce in this recipe, which helps keep the muffins moist and allows for less oil - there's only 1 TB of oil in this entire batch of 8-10 muffins!!

Since Valentine's is approaching I used these heart-themed liners I picked up at a dollar store, and I told my daughter they are "love muffins". I plan to make some cupcakes for hubby using the same liners and will post those pics later.
