
Last night I made nachos for my husband. He loves them, and would eat just nachos for supper. But, of course, I 'balanced' the meal with soup, brown basmati rice, and salad. I don't expect him to eat much of the 'healthy stuff'... just a little. After all, if each of us ate our favorites for supper, he'd have the nachos, I'd dig into a pint of soy ice-cream, and my daughter would be eating artichokes and olives!
I made a small separate tray for my daughter, with just the cheese and olives, and the guacomole was mostly for her. My husband paired his nachos with Tofutti Better Than Sour Cream (this is the non-hydrogenated version).
These nachos are pretty simple, but I'll post the recipe soon!
